Congrats on the new foods! I about "shot my wad" with this recipe. Sorry. You should be able to find lots of gluten free recipes since I see lots of it in the supermarkets. Way to go!

Sounds good Michelle - and thx for joining! I love to cook and, due to Bill's celiac disease and some food allergies, I cook everything from scratch. Recently he / we got to add carbs and some gluten-free things in (after 4 years of not doing any) so I'll be learning how to cook with GF flours and will add here (if they don't suck!)

Going forward ... let's try to put recipes in as a "discussion" (click "Add a discussion" above this comment wall) so it can have a title and "tags" on each post (a tag = a few key ingredients) .. then people can add comments and search for things! Thanks again for stopping by and look forward to reading more vegan stuff since we only eat meat once a day now so looking for new ideas.

I'm at a disadvantage here, since I'm a vegetarian and I hate to cook, but I'll try to be the voice for veggies everywhere and share what I can. I LOVE to READ recipes though, and I love to eat.

Roasted Root Vegetables

You can use any combination of: sweet and regular potatoes, rutabagas and other turnips, parsnips, carrots, onions, garlic, beets, fennel, sunchokes -- and I sometimes add red peppers and celery just for fun. Can you tell yet that I'm not a cook?
Cut into bite sized pieces. Toss in organic olive or coconut oil, mix in a handful or two of fresh rosemary. Spread out in a large baking dish.
Cook at 325 for 45 mins. Stir every 5-10 mins, whenever you remember. If you have to have some sort of animal product with it, you can serve with sour cream.
